Toll House Chocolate Chip Cookies

Ida

1 c. shortening
3/4 c. sugar
3/4 c. brown sugar
2 eggs
1 tsp. hot water
1 tsp. vanilla
1 tsp. salt
1 tsp. baking soda
1 1/2 C. flour
2 C. quick oats
2 C. chocolate chips 

Mix sugars, shortening, and eggs. Beat until Fluffy! Add remaining ingredients.

Bake at 375 degrees for about 8 minutes or until SLIGHTLY brown. (Important if you take out to late the are too crispy, the trick is taking them out when they are just barely starting to get golden on the edges and they still appear a little shiny) 

Alterations:  Old fashioned oats work fine, just use a little less.  Add a little coconut for a new flavor!

Turtles

Mix: ½ cup butter, melted                              Combine: 2 eggs, beaten
¾ cup sugar                                                     3 Tbs. cocoa
                                                                        1 cup flour
                                                                        1 tsp. vanilla
Heat waffle iron to medium heat.  Spoon batter on in tsp. to form cookies.  Bake 50 seconds.  Remove with fork.

Shaggy Dogs

½ cup butter                                                    1 pkg. (10 ½ oz.) miniature marshmallows
1 cup chocolate chips                                      1 cup nuts
2 eggs                                                              1 pkg. (14 oz.) angel flake coconut
1 lb. powdered sugar (about 4 cups)

A)    Melt butter & chocolate chips together.  B) Beat eggs in a large bowl and add sugar.  Stir.  Combine A and B.  Add nuts and marshmallows.  Roll a tsp. full at a time in coconut.  Place on waxed paper.  Makes about 58 dogs.

Mix thoroughly: 1 cup soft shortening           Sift and stir in: 4 cups flour
            2 cups brown sugar                                         1 ½ tsp. baking powder
            2 eggs                                                              ½ tsp. soda
Stir in: ¼ cup water                                                     ¼ tsp. salt
            1 tsp. vanilla                                        Mix in: 1 cup moist shredded coconut

Chill dough 2 hours.  Roll into balls the size of walnuts.  Place 2" apart on ungreased baking sheet.  With fingers, flatten each ball into a 1 ½ x 2 ½ oblong ¼” thick.  Press each cookie lengthwise with fork.  Bake at 400 F for 8-10 minutes.  Makes about 5 dozen cookies.

Cherry Poppy Seed Twinks

1 cup powdered sugar                                                 2 cups flour
1 cup butter                                                                 1 Tbs. poppy seeds
1 tsp. vanilla                                                                ½ tsp. salt                               
1 egg                                                                           ½ cup cherry pie filling

Mix ingredients until smooth, roll into medium sized ball on ungreased cookie sheet.  Make a thumbprint and add one cherry with a little filling.  Bake at 300 F just until set or very light brown (18-20 min).

O-Henry Bars (Parker Bars)

1 cup sugar                                                                  3 cups rice krispies
1 cup light corn syrup                                                 Topping: 1 cup milk chocolate chips
1 cup peanut butter                                                                 1 cup butterscotch chips

Boil sugar and corn syrup 1-1 ½ min.  Add peanut butter.  Stir in rice krispies.  Melt chocolate chips together.  Put in fridge to set chocolate on top.  

Cherry Winks

2 ¼ cups sifted flour                                                   2 Tbs. milk
1 tsp. baking powder                                                  1 tsp. vanilla
½ tsp. baking soda                                                      1 cup chopped nuts
½ tsp. salt                                                                    1 cup finely cut pitted dates
¾ cup soft butter                                                         1/3 cup finely cut maraschino cherries
1 cup sugar                                                                  2 ½ cup flakes
2 eggs                                                                          18 maraschino cherries cut in quarters
Sift together flour, baking powder, soda, and salt.  Blend butter and sugar, add eggs, and beat well.  Stir in milk and vanilla.  Add sifted dry ingredients together with nuts meats, dates, and cut cherries.  Mix well.  Crush corn flakes in fine crumbs.  Shape dough into balls (1 Tbs. per ball).  Roll in crumbs and place on greased baking sheet.  Top each with ¼ maraschino cherry. 
Bake at 375 F for 12 minutes or light brown.  Makes 6 dozen cookies.

Applesauce Cookies

1 cup applesauce                                                         1 tsp. soda
½ cup shortening                                                         ½ tsp. nutmeg
1 cup sugar                                                                  ½ tsp. cloves
2 eggs                                                                          1 tsp. cinnamon
2 cups flour                                                                 raisins
dash salt                                                                      nuts
                                                                                    chocolate chips
Cream shortening, sugar, eggs, & applesauce.  Add dry ingredients. 
Bake on greased cookie sheet at 350 F for 8-12 min.

No-Bake Chocolate Peanut Butter Cookies

2 cups sugar                                                                1 tsp. vanilla
2 Tbs. corn syrup (2 ½ more gooey)                           ¾ cup peanut butter
½ cup milk                                                                  dash of salt
½ cup butter                                                                3 cups oats
                                                                                    2 Tbs. cocoa               
Boil sugar, syrup, milk, and butter 2 min, stirring regularly.  Add vanilla, peanut butter, and salt.  Mix until melted then pour over oats and cocoa.  Mix well and quickly drop onto waxed paper.  Refrigerate until set (about 45 min).  Makes 30-45 cookies.

Coconut Macaroons

Mix: 1 1/3 cup coconut                                               Stir in:1/8 tsp. salt
1/3 cup sugar                                                               2 egg whites
3 Tbs. flour                                                                  ½ tsp. almond extract

Drop onto greased tinfoil.  Bake at 325 F for 20 min.  Makes 1 1/2 dozen.

Peanut Butter Cookies

½ cup butter                                                                1 egg
½ cup chunky peanut butter                                       1 ¼ cups flour
½ cup sugar                                                                 ½ tsp. baking powder
½ cup brown sugar                                                      ¾ tsp. soda
                                                                                    ¼ tsp. salt
Mix all together.  Chill.  Bake at 375 F for 10-12 min.

1 cup shortening                                              Basic Buttercream Frosting:
2 cups sugar                                                                1 lb (3 ½ cup) powdered sugar
Cream: 4 eggs                                                             ½ cup crisco
            1 cup milk                                                       ¼ cup water
            2 tsp. vanilla                                                    ½ tsp. vanilla
            6 cup flour                                                       ½ tsp. lemon
            2 tsp. soda                                                       ¼ tsp. rum (where do we get this Brenda?)
            4 tsp. cream of tartar                                       pinch of salt
            1 tsp. salt                                             Mix all ing. together and beat until well blended.

Mix thoroughly.  Chill completely.  Roll out and cut out. 
Bake at 350 F for 8-10 min.  Makes about 3 dozen.

Girl Scout Thin Mints

Cookie: 18.25 oz. chocolate fudge cake mix              ½ cup cake flour
            3 Tbs. shortening, melted                                1 egg
                                                                                    3 Tbs. water
Combine ingredients adding a little water at a time until dough forms.  Cover & chill 2 hours.  Preheat oven to 350 F.  On a lightly floured surface, roll out dough to 1/16" thick.  Use a lid from spice container to cut.  Place on lightly greased sheet.  Bake 10 min.  Cool completely.

Coating: three 12 oz. bags semisweet chocolate chips
            ¾ tsp. peppermint extract
            6 Tbs. shortening
Melt together in microwave, using a fork, dip each wafer in chocolate and place on waxed paper.  Refrigerate until firm.

Cake Mix Cookies

1 box cake mix (French Vanilla, Cherry Chip)           2 eggs
1/3 cup oil                                                                   1 Tbs. water, as needed

Bake at 350 F on greased cookie sheet for 10 min.
You can add chocolate chips or any other candy.  Makes about 2 dozen.

Cinnamon Jumbles

½ cup butter                                                                2 ¼ cups flour
1 cup sugar                                                                  ½ tsp. soda
1 egg                                                                           ½ tsp. salt
¾ cup buttermilk                                                         ¼ cup sugar
1 tsp. vanilla                                                                1 tsp. cinnamon

Mix butter, sugar, and egg.  Stir in buttermilk and vanilla.  Stir in dry ingredients.  Chill dough, sprinkle with sugar and cinnamon.  Bake at 400 F for 8-10 min.

1 cup soft shortening (part butter)                              2 ¾ cups flour
1 ½ cups sugar                                                                        2 tsp. cream of tartar
2 eggs                                                                          1 tsp. soda
                                                                                    ¼ tsp. salt
Bake at 400 F for 8-10 minutes.  Sprinkle with 2 Tbs. sugar & 2 tsp. cinnamon.

Bush Ranger Cookies

½ cup sugar                                                                 ¼ tsp. baking powder
½ cup brown sugar                                                      ¼ tsp. salt
1 egg                                                                           1 cup quick-cooking oats
½ tsp. vanilla                                                               1 cup Wheaties or corn flakes
1 cup flour                                                                   ½ cup shredded coconut
Mix shortening, sugars, egg, and vanilla thoroughly.  Stir in remaining ingredients. 
Bake at 375 F for 8-12 min.  Double recipe.

Old Fashioned Buckeye Rolled Oatmeal Cookies

Beat well until fluffy: 1 cup soft shortening              Stir in: 1 ½ cup flour
1 cup sugar                                                      1 tsp. baking powder
1 cup brown sugar                                           ½ tsp. salt
Mix in: 2 eggs                                                             1 tsp. cinnamon
1 tsp. vanilla                                                    ¼ tsp. nutmeg
                                                                                    3 cups oats
Bake at 350 F for 10-15 min.  Add variety with: nuts, raisins, coconut, chocolate chips, dates.

½ cup shortening                                                         1 ½ cups flour
1 cup brown sugar                                                       1 tsp. salt
1 cup sugar                                                                  1 tsp. baking powder

Cream margarine, shortening, and sugars.  Add eggs and vanilla.  Add dry ingredients. 
Bake at 350 F for 10 min.  Set on cookie sheet for 1 min.
