Poppy Seed Muffins

2 cup flour
1/2 tsp. salt
1/4 cup poppy seeds
1/4 tsp. baking soda
1 cup sugar
1/2 cup butter, melted
2 eggs
3/4 cup sour cream
1 tsp. vanilla

Combine flour, salt, poppy seeds, and baking soda.  In a separate, larger bowl, cream together sugar and butter and beat for two minutes.  Add eggs one at a time, blending well after each.  Then add sour cream and vanilla and beat well.  Gradually blend in the flour mixture until well combined.  Bake 375 for 15-20 minutes.  Makes 12-18 muffins.

Brown Sugar Muffins

¼ cup butter                                                                ½ cup milk
½ cup brown sugar                                                      1 cup flour
1 egg                                                                           ½ tsp. soda
½ tsp. vanilla                                                               1/8 tsp. salt
                                                                                    ¼ cup chopped nuts
Cream butter and brown sugar.  Add eggs & vanilla.  Sift dry ingredients.  Add milk and dry ingredients alternately.  Bake at 375 F for 20 minutes.  Makes 1 dozen.

Sweeter Muffins

1 egg                                                                           1 ½ cups flour
½ cup milk                                                                  ½ cup sugar
¼ cup vegetable oil                                                     2 tsp. baking powder                                     
                                                                                    ½ tsp. salt
Mix left ing.  Blend dry ing. and then mix together just until flour is moistened (batter should be slightly lumpy).  Do not overmix.  Spoon into muffin cups.  Makes 12 muffins. 
Bake at 400 F for 20-25 min.  

Waffles

2 eggs                                                                          2 cups flour
2 cups buttermilk                                                        2 tsp. baking powder
1 tsp. soda                                                                   ½ tsp. salt       
                                                                                    6 Tbs. butter or shortening
Mix batter until smooth.  Cook on waffle iron.

Coffee Cake

1 ½ cup sugar                                                  Streusel:
½ cup butter                                                                1 cup brown sugar
2 eggs                                                                          ¼ cup flour
1 cup milk                                                                   4 tsp. cinnamon
3 cups flour                                                                 ¼ cup butter
4 tsp. baking powder                                                  1 cup chopped nuts
1 tsp. salt

Mix sugar, butter, & egg; stir in milk, add the rest.  Layer batter and streusel.  Top with streusel. 
Bake at 375 F for 25-35 min. in 9x13" greased pan. 

Grandma's Granola

3 cups regular oats                                                      4-6 cups rice krispies
1 cup coconut, almonds, and pecans                          ¼ cup Karo syrup
                       
Toast oats at 300 F for 15 min.  Then add coconut, almonds, & pecans and toast 15 more min.  Add rice krispies.  Pour Karo syrup over it all.  Stir together.

Selma's Granola

5-6 cups oatmeal (quick)                                             12 cups rice krispies
1 pkg. coconut on top                                                 2 ½ cups raisins
2 ½ cups almonds                                                       1 ½ cups dark corn syrup
           
Toast oatmeal at 300 F for 10 min.  Add coconut and toast 10 more min.  Stir in the rest.

Pumpkin Pancakes

2 cups flour                                                                 1 tsp. salt
2 Tbs. brown sugar                                                      1 ¾ cups milk
1 Tbs. baking powder                                                 ½ cup Libby's pumpkin
1 ¼ tsp. pumpkin pie spice                                          1 egg
                                                                                    2 Tbs. vegetable oil
Combine wet ing, dry ing, and then together.  Stir until just moistened (may be lumpy).  Cook on griddle.  Serve with cream cheese mixture.

Young's Crepes

1 ½ cups milk                                                              1 ½ cups flour
2 Tbs. oil                                                                     1/8 tsp. salt
3 eggs                                                                          1 Tbs. sugar

Beat eggs in blender and add rest of ingredients.  Blend until smooth.  Pour into pie plate if using crepe maker or make on griddle.  Top with bananas, peaches, strawberries, jam, sugar & cinn.
Orange Sauce:                                                             Cream Cheese topping:
Melt: ¼ cup butter                                                      cream cheese, softened
                      ½ cup orange juice concentrate                         sugar to taste
Add: ½ cup powdered sugar                                      1 tsp. vanilla
                                                                                                milk to desired consistency

Skinny Pancakes

6 eggs                                                                          1 tsp. salt
2 ¼ cup milk                                                               2 cups flour
                                                                                    ¼ cup oil
Blend all together.                                                      

Hoot'n Annie Pancakes

4 Tbs. butter                                                                2/3 cup milk
4 eggs                                                                          2/3 cup flour
                                                                                    ¼ tsp. salt
Melt butter in 9x13" glass baking dish at 425 F.  Beat all ingredients together.  Remove pan from oven.  Pour in batter.  Return pan to the oven.  Bake at 425 F for 20 min. or until puffy and golden brown.  Serve immediately.

Whole Wheat Pancakes

1 cup milk                                                                   2 tsp. baking powder
2 eggs                                                                          1 tsp. salt
2 Tbs. oil                                                                     2 Tbs. sugar or honey
                                                                                    1 + cup whole wheat flour
Blender option: use 1 cup unground wheat & add milk in blender.  Blend on highest speed for 5 min.  Add other ingredients & blend.  Bake on hot griddle.

Buttermilk Pancakes

1 cup white flour                                                         1/2 tsp. soda
1 cup whole wheat flour                                             1/2 tsp. salt
6 Tbs. brown sugar                                                      2 cup buttermilk
1 tsp. baking powder                                                   2 eggs, beaten
                                                                                    3 Tbs. butter, melted
Mix dry ing. together.  Whisk in buttermilk, egg, & butter until well combined and free of lumps.

Favorite Pancakes

1 egg                                                                           1 Tbs sugar
1 ¼ cups buttermilk or soured milk*                          1 tsp baking powder
2 Tbs vegetable oil or melted shortening                    ½ tsp soda
1 ¼ cups flour                                                             ½ tsp salt

Blend egg, milk and oil.  Blend dry ingredients together.  Add to liquids; beat with rotary beater until flour is moistened. (batter will be slightly lumpy) Grease griddle.  Pour batter onto hot griddle.  Turn pancakes as soon as they are puffed and full of bubbles, but before bubbles break.  Turn and brown on other side.  Serve immediately with butter and syrup.  Makes 16 pancakes.
*Put 1 Tbs vinegar or lemon juice into cup.  Fill with milk.  Let stand a few minutes.

Sweet Milk Pancakes:
Substitute sweet milk for buttermilk, add 2 tsp more baking powder and omit soda.  For extra lightness, beat egg yolk, add milk, etc.  Fold in stiffly beaten egg white.

Blueberry Pancakes:
Add ½ cup drained fresh or frozen berries to batter, fold in gently at the last.

Oatmeal Waffles

1 1/2 c. flour
1 c. quick rolled oats
1 T. baking powder
1/2 tsp. cinnamon
1/4 tsp. salt
2 eggs, slightly beaten

1 1/2 c. milk
6 T. butter, melted
2 T. brown sugar

Stir together flour, oats, baking powder, cinnamon and salt; set aside. In small mixing bowl, stir together eggs, milk, butter and brown sugar. Add to flour mixture; stir until blended. Pour batter on to grids of preheated, lightly greased waffle iron.  Great with chunky peanut butter and syrup, or fruit & whipped cream.

Sausage Egg Roll

2-3 cups white sauce                                                   1 lb. sausage
5 hard cooked eggs, diced                                          1 can of corn
1 cup of bread crumbs (white and/or wheat)
Brown sausage in pan.  While sausage is cooking, make white sauce.  Combine all ingredients (except bread crumbs) and place in casserole dish.  Sprinkle bread crumbs over top. 
Warm in 350 F oven for 20 min.  Serves 6-8.

Pumpkin Muffins

4 eggs                                                              2 cups flour
2 cups sugar                                                    2 tsp. soda
¾ cup vegetable oil                                         1 tsp. salt
15 oz. can pumpkin                                         1 tsp. baking powder
                                                                        1 tsp. cinnamon
Mix wet ing, dry ing, and then together.  Bake at 350 F for 18-22 min.  Makes 24 muffins.  Cool and then cut out a circle out of the top.  Fill with cream cheese frosting and replace the top to look like a pumpkin.

Frosting: 1 cup powdered sugar                     8 oz. cream cheese
            ½ tsp. vanilla                                       4 Tbs. butter

Brenda's Granola









8 cups old fashioned oatmeal (not Quick Oats)
6 cups rolled wheat flakes (I use Wheaties)
2 cups coconut (I use only 1 cup to lower the calories)
1 tsp salt
1 1/2 cup brown sugar (I use only 3/4 cup to lower the calories)

Mix then add:
1 cup oil
1 cup water
3 Tbs vanilla
4 oz sliced almonds
cinnamon to taste

Mix together and spread on a cookie sheet. Bake for 2 hours at 150 degrees stirring every 1/2 hour. (I bake at 170 because my oven doesn't go that low and it works ok).
